RoZ's Cornbread Recipe |

1-1/2 cup stoneground cornmeal 1/2 cup whole wheat flour 1 tablespoon baking powder 3/4 teaspoon salt 2 tablespoon oil 1 egg, lightly beaten 1 tablespoon brown sugar 1-1/2 cup soy milk or milk 1 medium onion, chopped 1 jalapeno pepper, finely chopped (seeded if you don't want it as hot) 1/2 cup corn, frozen, canned or fresh *See note below Preheat the oven to 400 degrees. Mix all the dry ingredients together--cornmeal, flour, baking powder and salt. Saute the onion in 1/2 tablespoon oil, until translucent. Add the rest of the oil, sugar and soy milk to the beaten egg and beat all together. Then add the egg mixture along with the onion, jalapeno and corn, to the flour mixture. Don't overbeat. The dough can still have some lumps. Lightly oil an 8-inch pan, a cast iron skillet works well, and bake for 30-35 minutes, or until its lightly brown. Let it cool, then remove from pan and slice into wedges. Yum, yum. *Note: the onion, jalapeno pepper and corn are optional. Use any or all. |
